CROKINI CHERRY TOMATO – BASIL GAZPACHO EXPRESS



Ingredients

  • 500 g (2 1/2 cups) CROKINI cherry tomatoes
  • 6 basil leaves
  • 1 small onion
  • 2 tbsp olive oil
  • 1 pinch salt

 


The recipe

- Rinse, dry, then cut the CROKINI cherry tomatoes into cubes and place them in a bowl.
- Season them with the salt, olive oil, finely chopped onion and 3 basil leaves.
- Mix using a hand mixer in a tall and deep container to avoid spills or ideally in a blender.
- Chop the remaining 3 basil leaves.
- Evenly pour the CROKINI cherry tomato gazpacho into glasses and garnish with the chopped basil before serving.
